Homemade pot pies
2 cups frozen mixed vegetables, thawed
1 cup diced cooked chicken
1 can (10 3/4 oz) condensed cream of chicken soup
1 can (16.3 oz) Pillsbury Grands! Flaky Layers refrigerated biscuits

Here's what you need to do:
1) Heat oven to 375°F. In medium bowl, combine vegetables, chicken and soup; mix well.
2) Press each biscuit into 5 1/2-inch round. Place 1 round in each of 8 greased regular-size muffin cups. Firmly press in bottom and up side, forming 3/4-inch rim. Spoon a generous 1/3 cup chicken mixture into each. Pull edges of dough over filling toward center; pleat and pinch dough gently to hold in place.
3) Bake at 375°F 20 to 22 minutes or until biscuits are golden brown. Cool 1 minute; remove from pan.

Hot & Sour Soup
Dude, this is soooo easy and super delicious! I made a half recipe with vegetable broth instead of water and w/o pork and it turned out great!

Vegetarian potstickers
These are delicious and take a bit of time, but are about as easy as they come. They would have been a lot faster if I had a bigger skillet and didn't have to do them in small batches. Make sure that they don't touch, or else when you pour in the water, they'll all stick together.

Poblano, Mango, and Black Bean Quesadillas
I'm a sucker for mango and avocado. These are super yummy and seriously easy! I bought and ripened whole mangos and avocados, but if you're in a super hurry, or just lazy, you can do canned and pre-sliced items like the recipe calls for. For extra fanciness, you can top them with sour cream & salsa.

Yield: 4 quesadillas
Time: 15 min
