Prep time: 20 min (for reals!)
1/2 t honey
2 T soy sauce
2 T cider vinegar
1 t fresh black pepper
1 T sesame oil
1 t fresh minced gingerroot
1 t soy sauce
1 t cornstarch
1/2 lb fresh lean pork, cut into thin strips (optional)
5 cups water (substitute veggie broth!)
1 c finely chopped fresh mushrooms
1 lb firm tofu, finely chopped (medium works fine)
1 c finely chopped celery or cucumber
2 1/2 T cornstarch
2 T cold water
1 egg, beaten, or egg substitute
1. In a large bowl, combine the first seven ingredients. Set aside.
2. Mix together the 1 t soy sauce & cornstarch in a small bowl. Add the pork strips
3. Bring the 5 cups water to a boil in a large saucepan. Add the pork strips, stirring well. Continue boiling as you add the mushrooms, tofu, and celery. Boil for 3-5 min more and thicken with the cornstarch combined with the 2 T water. Stir to a boil, then add the egg and quickly blend.
4. Remove from heat immediately and pour over the ingredients in the large bowl. Mix gently and serve hot.
