3 main-dish servings
1 9oz pkg. refrigerated meat or cheese-filled tortellini*
½ c frozen peas
½ c broccoli flowerets
1/3 c shredded fontina or swiss cheese*
1 T olive oil
2 t snipped fresh oregano or ½ t dried oregano, crushed
¼ t crushed red pepper
Tomato wedges (optional)
Oregano sprigs (optional)
Prepare pasta according to package directions, adding peas and broccoli to water with pasta; drain. Add cheese, oil, oregano, and crushed red pepper to the pasta-vegetable mixture; toss to mix. If desired, garnish with plum tomato wedges and oregano sprigs.
*I used dried tortellini instead (just cook for awhile before adding veggies) and Parmesan cheese instead and it turned out great!
