mushroom tofu scramble

- main dish
- Vegan
- serves 2
- 3 minutes prep time
- 5 minutes cooking time
- less than $5.00

- looks like scrambled eggs but it doesn't have eggs or an egg flavor.

- 1 1/2 tablespoon sunflower oil
- 1 package firm tofu
- 1 medium onion
- 4-8 white or cremini mushrooms
- 1/4 teaspoon turmeric
- 1 teaspoon ginger
- 3 tablespoons tamari sauce (a wheat free soy sauce)
- 1 teaspoon red chili powder

- Slice the onions and mushrooms
- put the sunflower oil in a seasoned cast iron skillet (or your favorite frying pan) and turn the heat on high
- after 35-60 seconds (give the oil a chance to heat up), add the sliced onions.
- when the onions begin to change color/texture, add the mushrooms
- when the mushrooms begin to change color/texture, crumble the tofu (I used my hand) into the onions and mushrooms
- add the remaining ingredients
- serve as you would scrambled eggs

- Eggs give me a migrane, but I've envied the short time it takes to make scrambled eggs or omlets. This evening, I had less than 10 minutes to make and eat dinner and I didn't have any left overs. Seeing the tofu and discovering the onion and tofu I decided to see what I could come up with eh viola. enjoy!
